Ingredients
  

For the Main Dish

  • 4 pieces boneless, skinless chicken breasts Use thighs for a richer flavor.
  • 2 large sweet potatoes, peeled and cubed Keep the peel on for added fiber if preferred.
  • 1 pound green beans, trimmed Asparagus or broccolini can be used as substitutes.

For the Sauce & Marinade

  • 1/4 cup honey Maple syrup can be used for a different sweetness.
  • 1/4 cup soy sauce Use low-sodium soy sauce or tamari for gluten-free.
  • 3 cloves garlic, minced Fresh garlic is recommended.
  • 2 tablespoons olive oil Any neutral oil can work.
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme Rosemary can be swapped for a different flavor.
  • to taste salt and black pepper

Instructions
 

Preparation

  • In a small bowl, whisk together the honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  • Place chicken in a dish or a zip-top bag, pour half the marinade over it, and refrigerate for at least 30 minutes.

Roasting

  • Preheat the oven to 400°F. On a baking sheet, spread the cubed sweet potatoes, drizzle with olive oil, and season with salt and pepper. Roast for about 15 minutes.
  • Remove the baking sheet from the oven. Push sweet potatoes to one side, add marinated chicken breasts and trimmed green beans on the other, and drizzle with the remaining marinade.
  • Return the baking sheet to the oven and bake for 20–25 minutes until chicken reaches 165°F and sweet potatoes are tender.

Notes

Marinate chicken up to 2 hours for deeper flavor. Store leftovers in the refrigerator for up to 3–4 days.
