Ingredients
  

Chicken Preparation

  • 1 lb boneless, skinless chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Rice and Sauce

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey

Vegetables

  • 1 cup mixed vegetables (optional) You can add bell peppers or peas as well.

Garnish

  • Chopped green onions For garnish

Preparation

  • Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove the chicken and set it aside.

Cooking

  • In a bowl, mix together the BBQ sauce, honey, and minced garlic.
  • In the same pan, toast the uncooked rice for 1–2 minutes. Then, add the chicken broth and half of the sauce mixture. Stir to combine.
  • Return the chicken to the pan and pour the remaining sauce over the top.
  • Cover the pan and simmer on low heat for 15 minutes.
  • After 15 minutes, add the mixed vegetables, cover again, and cook for 5 more minutes or until the rice is tender and the chicken is cooked through.
  • Let it sit for 5 minutes. Garnish with chopped green onions and serve hot.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3–4 days. You can freeze it for longer storage. To enhance flavor, marinate the chicken in the BBQ sauce mixture for a few hours before cooking.
