Ingredients
  

For the Chicken

  • 2 large large chicken breasts Can substitute with boneless skinless thighs for more flavor.
  • 1 tablespoon olive oil Or use a mild vegetable oil.
  • to taste Salt and pepper Taste the gravy before final seasoning to adjust.

For the Base

  • 4 cups mashed potatoes Can use store-bought or homemade.

For the Topping

  • 1 cup chicken gravy Jarred or homemade gravy works well.

To Serve (optional)

  • to taste chopped parsley For garnish.

Preparation

  • Pat chicken breasts dry with paper towels and season both sides evenly with salt and pepper. Let sit for 5 minutes.
  • Heat a large skillet over medium heat and add olive oil. Once shimmering, add chicken breasts and cook until golden brown, about 6–7 minutes per side. Remove and let rest for 5 minutes.
  • Prepare mashed potatoes according to your preferred recipe or reheat store-bought mashed potatoes gently to keep them warm.
  • Slice the rested chicken into even strips against the grain.

Assembly

  • In each bowl, spoon a generous portion of mashed potatoes as the base.
  • Top with sliced chicken and warm gravy, drizzling about 1/2 cup per bowl.
  • Garnish with chopped parsley if desired and serve warm.

Notes

For variations, you can add garlic powder to the chicken, sour cream to the gravy, or even cheese to the potatoes. Great for leftovers or potlucks.
