Ingredients
  

For the Salad

  • 1 pound shrimp, peeled and deveined Fresh or frozen shrimp can be used.
  • 4 strips bacon Turkey bacon can be used for a lighter option.
  • 4 cups mixed greens Spinach or arugula can be substituted.
  • 1 cup cherry tomatoes, halved
  • 1 whole cucumber, sliced
  • 1 whole avocado, diced Toss avocado with lemon juice to prevent browning.

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • to taste Salt and pepper

Preparation

  • In a skillet, cook the bacon over medium heat until crispy. Once done, transfer to a paper towel to drain and crumble it into pieces.
  • In the same skillet, add the shrimp and cook until they turn pink and are cooked through, about 3-4 minutes.
  • In a large bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, and diced avocado.

Assembly

  • Add the cooked shrimp and crumbled bacon on top of the salad base.
  • Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine all ingredients.
  • Serve immediately and enjoy your homemade salad fresh.

Notes

For added flavor, consider mixing in fresh herbs into the dressing or topping the salad with toasted nuts. Avoid microwaving the mixed greens to keep them fresh.
