Ingredients
  

For the base

  • 1 lb ground beef You can use ground turkey or chicken for a leaner option.
  • 1 cup onion, diced
  • 2 cups pasta (such as elbow) Feel free to use whole wheat, gluten-free, or a different shape of pasta as per your preference.

For the sauce

  • 3 tbsp tomato paste Tomato sauce can work in a pinch; just adjust the quantity.
  • 3.5 cups beef broth Homemade or low-sodium beef broth can reduce sodium content.
  • 2 tsp kosher salt
  • 0.5 tsp black pepper
  • 1.25 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.5 tsp ground mustard

To serve

  • 2.5 cups cheddar cheese Try using reduced-fat cheddar for a healthier option.

Instructions
 

Preparation

  • Heat a large pot over medium heat. Add the ground beef, breaking it up with your spoon as it cooks until slightly browned.
  • Once the beef is partially cooked, add the diced onion and continue breaking up the ground beef until fully cooked and the onions are soft, about 5-7 minutes.

Cooking

  • Add all seasonings and tomato paste to the pot, stirring well to combine.
  • Pour in the pasta and beef broth, stirring everything together.
  • Cover the pot, reduce heat to low and let it simmer for about 20 minutes, stirring occasionally until the pasta is tender.
  • Remove the pot from heat and stir in the cheddar cheese until it's melted and creamy.

Notes

For even cooking, break the beef into small chunks as it browns. Monitor the simmering pasta to avoid overcooking. If it seems too thick, add a touch more beef broth. Always taste and adjust seasoning before serving.
