Ingredients
  

For the Base

  • 2 large sweet potatoes, diced Yukon gold or butternut squash can substitute if desired.
  • 1 tablespoon olive oil for roasting Use any neutral oil for roasting.
  • Salt and pepper to taste

For the Beef

  • 1 lb ground beef Use leaner ground beef (90/10) for less fat or ground turkey for lower calories.
  • 1/4 cup hot honey If you don’t have hot honey, mix regular honey with a pinch of red pepper flakes or a small dash of hot sauce.

To Serve

  • 1 cup cottage cheese Plain Greek yogurt is a good swap if you prefer tangy creaminess.
  • 1 avocado, sliced Sliced cucumber or a few spoonfuls of guacamole can be used as alternatives.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C). Dice the sweet potatoes into evenly sized cubes.
  • Toss the diced sweet potatoes with a light drizzle of olive oil, and season with salt and pepper.

Cooking Sweet Potatoes

  • Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25–30 minutes, tossing once halfway.
  • Keep an eye on the edges so they don’t burn; lower oven temperature if necessary.

Cooking Beef

  • While the potatoes roast, heat a skillet over medium heat and crumble in the ground beef. Cook until fully browned.
  • Season with salt and pepper as it cooks, and drain excess fat if desired.
  • Lower the heat and add the hot honey to the cooked beef; stir until fully coated.

Assembly

  • To serve, place roasted sweet potatoes in a bowl. Top with hot honey beef, add a dollop of cottage cheese, and arrange sliced avocado on top.
  • Drizzle more hot honey if desired before serving warm.

Notes

Cool slightly before plating for best texture. For meal prep, components can be made ahead and assembled fresh.
