Ingredients
  

For the Casserole Base

  • 1 lb lean ground turkey
  • 0.5 cup diced red bell peppers Optional

For the Sauce & Mix

  • 4 oz cream cheese, softened
  • 5 oz fresh spinach, chopped or whole
  • 1 egg, beaten
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • to taste black pepper

For the Cheese Topping

  • 1 cup cheddar cheese, freshly shredded Divided: ½ cup for the mix, ½ cup for the top
  • 0.25 cup plain Greek yogurt Optional mix-in for extra creaminess

Preparation

  • Preheat the oven to 375°F and grease a 9×9-inch baking dish.
  • Cook ground turkey in a skillet over medium heat for 6–8 minutes, breaking it up until no pink remains.
  • Stir in garlic powder, salt, and black pepper. Add the spinach and optional diced red bell pepper, cooking until the spinach wilts, about 2–3 minutes.
  • Reduce heat to low and stir in the softened cream cheese until melted and smooth.
  • Let the mixture cool for 5 minutes, then stir in the beaten egg and ½ cup of cheddar cheese, mixing until combined.
  • Transfer the mixture to the prepared baking dish, top with remaining cheddar cheese, and bake uncovered for 20–25 minutes until bubbly and golden.
  • Let rest for 10 minutes before slicing and serving.

Notes

For best results, soften cream cheese ahead and drain moisture from spinach. Experiment with variations by adding different ingredients or spices to customize flavors.
