  • 1 piece low-carb tortilla Substitute with whole wheat or regular tortillas if preferred.
  • 1 cup cooked chicken, shredded Any cooked chicken works here, including rotisserie.

For the Sauce

  • 2 tablespoons Greek yogurt Can be swapped with low-fat sour cream.
  • 2 wedges Laughing Cow cheese Any soft cheese can be used.
  • 1 tablespoon ranch seasoning Use a homemade blend for controlled ingredients.

To Serve

  • 1 spray cooking spray or a small amount of oil For coating the skillet.

Preparation

  • In a bowl, mix the shredded chicken, Greek yogurt, Laughing Cow cheese, and ranch seasoning until well combined.
  • Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or oil.

Cooking

  • Place the low-carb tortilla in the skillet and spread the chicken mixture evenly over half of the tortilla.
  • Fold the tortilla in half and cook for 2-3 minutes on each side, or until golden-brown and crispy.
  • Remove from the skillet, slice, and serve immediately.

Notes

You can prepare the chicken filling in advance and store it in the refrigerator for 2-3 days. Reheat in a skillet or air fryer when ready to eat. For added flavor, a squeeze of lime or fresh herbs can enhance the presentation.
