  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup coconut oil or vegan butter, softened
  • 1 cup sugar
  • 1/4 cup almond milk or any plant-based milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)

Decoration (optional)

  • Royal icing or fondant for decoration

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream the coconut oil and sugar until light and fluffy.
  • Add the almond milk, vanilla extract, and almond extract, and mix well.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll out the dough on a floured surface to about 1/4 inch thick.
  • Use a heart-shaped cookie cutter to cut out shapes and place them on the prepared baking sheet.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow to cool before decorating with icing or fondant if desired.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. For longer storage, freeze them in a freezer-safe container. They can last for a few months in the freezer.
