No-Bake Chocolate Peanut Butter Energy Bites

  • In a large bowl, combine rolled oats, peanut butter, honey, dark chocolate chips, vanilla extract, and salt. Stir until well mixed.
  • Using your hands, form the mixture into small balls, about 1 inch in diameter.
  • Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  • Once set, transfer the bites to an airtight container and store in the refrigerator for up to one week.

Berry Chia Pudding

  • In a bowl, whisk together chia seeds, almond milk, honey, and vanilla extract until well combined.
  • Cover the bowl and refrigerate for at least 2 hours or overnight until the mixture thickens.
  • Once thickened, stir the pudding and top with fresh berries before serving.
