Ingredients

  • 2 large sweet potatoes Use regular orange-fleshed sweet potatoes for classic flavor.
  • 1 small onion Yellow or white onion works best.
  • 2 cloves garlic Fresh garlic gives the best flavor.
  • Salt to taste
  • Pepper to taste

For Cooking

  • Olive oil or coconut oil for frying Flexible oil choice.

  • Paprika (optional)
  • Cumin (optional)

Preparation

  • Peel the sweet potatoes and grate them on a box grater or food processor.
  • Squeeze out excess moisture using a clean kitchen towel.
  • Finely chop the onion and mince the garlic.
  • In a bowl, mix the grated sweet potatoes, onion, garlic, salt, pepper, and optional seasonings.
  • Form the mixture into small patties.

Cooking

  • Heat a skillet over medium heat and add oil to coat the bottom.
  • Place patties in the hot skillet without crowding.
  • Cook for about 4-5 minutes per side until golden brown.
  • Remove patties and drain excess oil on paper towels.

Notes

For best results, dry the shreds well to prevent sogginess. Don't overcrowd the pan and maintain medium heat for an even cook.
