  • 2 pieces chicken breasts, poached and shredded For richer flavor, consider roasting the chicken before shredding.
  • 4 cups chicken broth Use gluten-free chicken broth for a gluten-free version.
  • 2 pieces carrots, diced
  • 2 pieces celery stalks, diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed and chopped
  • 1 cup spinach or kale
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper

Preparation

  • In a large pot, sauté onion and garlic until fragrant.
  • Add carrots, celery, and green beans, and cook for a few minutes.
  • Pour in the chicken broth and bring to a boil.
  • Add the poached chicken, thyme, and rosemary.
  • Reduce heat and simmer for about 20 minutes.
  • Stir in the spinach or kale and cook for an additional 5 minutes.
  • Season with salt and pepper to taste.

Serving

  • You can add a slice of whole-grain bread on the side for a complete meal.

Notes

Let the soup cool completely before storing. Place it in an airtight container and refrigerate for up to 4-5 days. You can also freeze it for longer storage.
