Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  • Roast sweet potatoes for 25-30 minutes or until tender.
  • While sweet potatoes are roasting, cook the rice according to package instructions.

Cooking the Chicken

  • Season chicken breasts with salt and pepper.
  • Grill or pan-cook over medium heat for about 6-7 minutes on each side or until fully cooked.

Assembly

  • Once everything is cooked, assemble the bowl by placing rice at the base.
  • Add sliced chicken and roasted sweet potatoes on top.
  • Top with your choice of optional toppings if desired.

Notes

Cut sweet potatoes evenly for even cooking. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Cook rice with a little salt or chicken broth for extra flavor. Let chicken rest for 5 minutes after cooking for juicier slices.
