  • 2 pieces chicken breasts Lean protein source.
  • 1 cup marinara sauce Add more for extra sauce.
  • 1 cup shredded mozzarella cheese Can use reduced-fat option.
  • 1/2 cup grated Parmesan cheese
  • 1 cup mixed vegetables (such as bell peppers, zucchini, and broccoli) Use fresh for best flavor.
  • 2 tablespoons olive oil For drizzling vegetables.
  • Salt and pepper to taste
  • Italian seasoning to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the chicken breasts on a sheet pan and season with salt, pepper, and Italian seasoning.
  • Spread the mixed vegetables around the chicken on the pan and drizzle with olive oil. Toss to coat.

Cooking

  • Bake the chicken and veggies for 20-25 minutes.
  • Remove the pan from the oven and top each chicken breast with marinara sauce, mozzarella cheese, and Parmesan cheese.
  • Return to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.

Serving

  • Serve immediately with the roasted veggies.

Notes

To store leftovers, place any uneaten Chicken Parmesan in an airtight container and keep it in the refrigerator. It will stay fresh for up to three days. For best results, reheat in the oven or microwave until warmed through. For extra flavor, marinate the chicken in Italian dressing for 30 minutes before cooking.
