Preparation

  • Preheat the oven to 325°F (160°C).
  • In a mixing bowl, combine almond flour, melted coconut oil, and a pinch of salt. Mix until the consistency is similar to damp sand.
  • Pack the mixture tightly into the base of a greased springform pan to create the crust.

Mixing the Filling

  • In another bowl, beat Greek yogurt, low-fat cream cheese, honey (or maple syrup), eggs, and vanilla extract until smooth and creamy.

Baking

  • Pour the filling over the prepared crust, spreading it evenly.
  • Bake for 30-35 minutes or until the edges are set but the center is still slightly jiggly.
  • Allow to cool at room temperature for an hour, then refrigerate for at least 4 hours or overnight.

Serving

  • Before serving, top your cheesecake with optional toppings like fresh berries, chocolate drizzle, or crushed nuts.

Notes

For a vegan option, substitute eggs with flax eggs and use dairy-free cream cheese. Crust issues can be resolved by adding more melted coconut oil or pre-baking the crust.
