Ground Turkey Rice Bowls with Bang Bang Sauce

Ingredients
  

For the Base

  • 1 lb ground turkey For a leaner option, consider using ground chicken or plant-based turkey substitutes.
  • 1 Tbsp sesame oil or favorite cooking oil
  • 2-3 cloves garlic (minced) Use fresh for best flavor.
  • 2 tsp grated ginger Fresh ginger enhances flavor.
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 1-2 Tbsp sriracha Adjust based on spice preference.
  • 2-3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt More or less to taste.

For the Sauce

  • ½ c mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 3 Tbsp sweet chili sauce
  • ½-1 Tbsp sriracha Add more to kick up the spice.
  • 1 tsp rice vinegar
  • 2 tsp honey
  • 2 tsp corn starch

To Serve

  • 4 c rice white or brown
  • 1 c shredded carrots
  • 1 c sliced cucumbers
  • 1 c shelled edamame
  • ½ c pickled onions
  • 1 c avocado
  • 1 c shredded cabbage
  • ¼ c sliced green onion
  • 2 Tbsp sesame seeds

Instructions
 

Prep Bang Bang Sauce

  • In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey. Whisk well to combine and adjust the flavors to your liking. Chill until ready to serve.

Prepare the Ground Turkey Mixture

  • Over medium-high heat, add the sesame oil to a large skillet. Once hot, add the ground turkey and break it into smaller pieces. Cook until the turkey is browned and has reached an internal temperature of 165°F.

Add Flavorings

  • Once the turkey is cooked through, reduce the heat to medium-low and stir in the minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Mix well.

Thicken the Mixture

  • Sprinkle the cornstarch over the turkey mixture and stir. Allow it to simmer for 2-3 minutes until the sauce thickens slightly.

Assemble Rice Bowls

  • Layer your rice in bowls, followed by the turkey mixture. Top with shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, and shredded cabbage. Drizzle some Bang Bang sauce over the top and finish with sliced green onion and sesame seeds.

Notes

For an extra crunch, add crispy fried onions on top. Keeping the sauce light and well-balanced will enhance the overall taste of the dish.
