Cooking

  • Heat the vegetable oil in a large skillet over medium heat until it shimmers.
  • Add minced garlic and ground chicken, cooking until the chicken is browned and fully cooked.
  • Push cooked chicken to one side of the skillet, add beaten eggs, and scramble until fully cooked.
  • Stir in mixed vegetables and cooked rice, breaking up any rice clumps to combine evenly.
  • Pour soy sauce over the mixture, season with salt and pepper, and stir everything together.
  • Cook for an additional 2-3 minutes to meld flavors, stirring occasionally.
  • Garnish with chopped green onions before serving.

Notes

For best texture, use day-old rice. Adjust seasoning after tasting to avoid blandness.
