  • 1 lb steak (sirloin or ribeye) Choose your preferred cut.
  • 2 medium zucchinis, sliced Fresh zucchinis enhance flavor.
  • 2 cups cooked rice or quinoa Use grains of your choice.

For the sauce

  • 1/4 cup olive oil For grilling and flavor.
  • 1/4 cup Greek yogurt Can substitute with sour cream or dairy-free yogurt.
  • 1 tablespoon Dijon mustard Adds tanginess to the sauce.
  • 1 tablespoon fresh herbs (parsley, cilantro, or dill), chopped Customizable based on preference.
  • Juice of 1 lemon Fresh lemon juice adds brightness.

Preparation

  • Preheat the grill to medium-high heat. Season the steak with salt and pepper.

Grilling the steak

  • Grill the steak for about 4-6 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let rest.

Grilling the zucchini

  • In a bowl, toss sliced zucchini with olive oil, salt, and pepper. Grill zucchini slices for about 3-4 minutes until tender.

Making the herb sauce

  • In a small bowl, mix together Greek yogurt, Dijon mustard, fresh herbs, and lemon juice to create the herb sauce.

Assembling the bowl

  • Place cooked rice or quinoa at the bottom, slice the grilled steak, top with grilled zucchini, and drizzle with herb sauce. Serve immediately.

Notes

Store leftovers in an airtight container in the fridge for about 3 days. Keep the sauce separate for freshness. When reheating, use a microwave or heat gently on the stovetop.
