Ingredients
  

For the Chicken

  • 1 piece chicken breast, sliced into tenders Use turkey breast for a leaner option or tofu for a vegetarian dish.
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or chopped fresh parsley Fresh herbs can replace dried for a fresher taste.
  • Salt & pepper to taste

For the Sweet Potato Fries

  • 1 medium sweet potato, peeled & cut into fries Regular potatoes can be used instead, though the flavor will differ.
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil

For the Avocado Salsa

  • 1 piece avocado, diced Swap with diced mango for a sweeter salsa.
  • 1/2 cup cherry tomatoes, halved Drain excess moisture if very juicy.
  • 1/4 piece red onion, finely chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • Salt & pepper to taste

To Serve

  • 2 tbsp ranch or Greek yogurt-based herb sauce (optional) Use Greek yogurt for a lighter option or a vegan yogurt alternative.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Toss the sweet potato sticks in 1 tablespoon of olive oil, smoked paprika, and salt.
  • Spread the fries on a baking sheet and bake for 25–30 minutes until they are crisp and golden.
  • While the fries are baking, season the chicken tenders with garlic powder, Italian seasoning (or parsley), salt, and pepper.

Cooking

  • In a grill pan or skillet over medium heat, add olive oil and cook the chicken tenders for about 3–4 minutes on each side until they are golden and juicy.

Salsa Preparation

  • In a bowl, combine the diced avocado, halved cherry tomatoes, red onion, cilantro, lime juice, and season with salt and pepper. Gently toss the ingredients together.

Serving

  • Layer the grilled chicken, sweet potato fries, and avocado salsa in a bowl. If desired, add a dipping sauce on the side.

Notes

Marinate chicken for 30 minutes for enhanced flavor. Avoid overcrowding the fries on the baking sheet to prevent sogginess. Reheat fries in the oven or air fryer for crispness.
