Ingredients
  

For the Meatballs

  • 1 pound ground beef or lamb
  • 1/2 cup breadcrumbs Substitute with whole-grain or gluten-free breadcrumbs for a healthier option.
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg

For the Veggies

  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced

For the Sauce

  • 1/2 cup tzatziki sauce Can substitute with a simple yogurt-based sauce.

To Serve

  • Cooked rice or quinoa Use rice or quinoa as a base.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the ground beef or lamb, breadcrumbs, Parmesan cheese, minced garlic, oregano, salt, black pepper, and egg. Mix everything together until well combined.
  • Shape the mixture into meatballs, approximately 1–2 inches in diameter, and place them on a baking sheet.

Cooking

  • Bake the meatballs in the preheated oven for 20–25 minutes or until cooked through.
  • While the meatballs are baking, divide your cooked rice or quinoa between serving plates.

Assembly

  • Top each bowl with diced cucumber, halved cherry tomatoes, sliced red onion, and the baked meatballs.
  • Drizzle tzatziki sauce over the top of each bowl and serve immediately.

Notes

Customize with different grains or toppings. Pairs well with fresh lemon juice or extra herbs for garnish.
