  • 2 cups cooked quinoa Cook according to package instructions.
  • 1 pound chicken breast Grilled and sliced.
  • 1 cucumber Diced.
  • 1 cup cherry tomatoes Halved.
  • 1 red onion Thinly sliced.
  • 1 bell pepper Diced.
  • 2 cups spinach or mixed greens
  • 1/2 cup feta cheese Crumble for topping.
  • Salt and pepper to taste
  • Olive oil For drizzling.
  • Lemon juice For drizzling.
  • Fresh herbs (e.g., parsley, dill) For garnish.

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber grated
  • 2 cloves garlic Minced.
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions
 

Preparation

  • Cook quinoa according to package instructions and let cool.
  • Grill the chicken breast and slice it into strips.
  • In a large bowl, combine quinoa, grilled chicken, diced cucumber, cherry tomatoes, red onion, bell pepper, and spinach.
  • Drizzle with olive oil and lemon juice, season with salt and pepper, and toss to combine.

Prepare Tzatziki Sauce

  • Mix together Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a small bowl.

Serve

  • Serve the Greek chicken bowls topped with feta cheese and tzatziki sauce.
  • Garnish with fresh herbs if desired.

Notes

Best served fresh. These bowls can be enjoyed warm or cold. You can also add a slice of lemon on the side for a zesty touch. Store leftovers in an airtight container in the fridge for up to 3 days.
