Ingredients
  

For the casserole

  • 2 tablespoons butter Divided for cooking and topping
  • 2 tablespoons all-purpose flour
  • 1 cup sour cream
  • 0.25 cup diced onion
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 3 14.5 ounce cans French-style green beans, drained
  • 2 cups shredded Cheddar cheese
  • 0.5 cup crumbled buttery round crackers
  • 1 tablespoon butter, melted

Instructions
 

Preparation

  • Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).

Cooking

  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Stir in the flour until smooth, and cook for 1 minute.
  • Stir in the sour cream, diced onion, salt, and sugar.
  • Add the green beans, and stir to coat well.
  • Transfer the green bean mixture to a 2 ½-quart casserole dish.
  • Spread Cheddar cheese over the green bean mixture.
  • In a small bowl, toss cracker crumbs and melted butter together; sprinkle over the top of the bean mixture.
  • Bake in the preheated oven until the topping is golden and the cheese is bubbly, about 30 minutes.

Serving

  • Serve hot from the oven as a side dish or enjoy on its own for a light meal.

Notes

You can use fresh or frozen green beans for a fresher taste. For spiciness, consider adding crushed red pepper flakes. For extra crunch, try adding sautéed mushrooms or crispy bacon.
