Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  • Beat in the eggs one at a time, making sure each is well incorporated before adding the next. Stir in the vanilla extract.
  • In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
  • Gradually add the dry mixture to the butter mixture, mixing well until just combined.
  • Gently stir in the chocolate chips until evenly dispersed throughout the dough.

Baking

  • Drop tablespoonfuls of dough onto ungreased cookie sheets, ensuring they are spaced about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the cookie sheets for a few minutes before transferring them to wire racks to cool completely.

Notes
