Ingredients

For the chicken

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 2 whole eggs, beaten
  • 3 tablespoons vegetable oil for frying
  • 1 cup broccoli florets

For the sauce

  • 1/4 cup soy sauce
  • 1/4 cup sugar adjust sweetness to taste
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil

For garnishing

  • Green onions for garnish

Instructions

Preparation

  • In a bowl, mix cornstarch and flour. Dip chicken pieces in the beaten eggs, then coat with the flour mixture.

Cooking

  • Heat oil in a skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 5-6 minutes.
  • In a separate bowl, combine soy sauce, sugar, rice vinegar, garlic, ginger, and sesame oil.
  • Add cooked chicken and broccoli to the sauce. Toss to combine and cook for an additional 2-3 minutes until the sauce thickens.

Serving

  • Serve hot, garnished with green onions.

Notes

For extra crunch, double fry the chicken. Feel free to add more veggies, such as bell peppers or carrots, to make it healthier. If you want a spicier version, add some red pepper flakes or a splash of hot sauce to the sauce mixture.
