  • 1 lb baby potatoes Cut in half if large for even cooking.
  • 4 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded To be added 15 minutes before serving.
  • 1 tablespoon olive oil
  • to taste Salt and pepper Adjust seasoning as needed.
  • Fresh greens or salad For serving.

Preparation

  • In a slow cooker, add the chicken breasts and baby potatoes.
  • In a bowl, mix together minced garlic, grated Parmesan, olive oil, salt, and pepper.
  • Pour the mixture over the chicken and potatoes.

Cooking

  • Cook on low for 6-8 hours or until chicken is cooked through and potatoes are tender.
  • About 15 minutes before serving, top with shredded mozzarella cheese and cover to allow it to melt.

Serving

  • Serve warm on a plate, adding a side of fresh greens or a simple salad.

Notes

For extra flavor, vegetables like carrots or green beans can be added to the slow cooker. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
