Preparation

  • Preheat oven to 400°F (200°C).
  • In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  • Place the chicken breasts in a baking dish and coat with the garlic herb mixture.
  • Add the baby carrots around the chicken in the dish.

Cooking

  • Bake for 25-30 minutes or until the chicken is cooked through and carrots are tender.
  • Garnish with fresh parsley before serving.

Notes

Ensure the chicken is cooked through by checking that the internal temperature reaches 165°F (75°C). For extra flavor, marinate the chicken in the garlic herb mixture for a few hours before baking. You can add other vegetables, like broccoli or zucchini, to the dish for more variety. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
