  • 2 tablespoons Dijon mustard Adjust to taste.
  • 1 cup heavy cream For a low-carb version, substitute with coconut milk.
  • 1 cup chicken broth Low-sodium is recommended.
  • 2 tablespoons olive oil For sautéing the chicken.
  • 1 piece onion, finely chopped Yellow or white onion works well.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • Salt and pepper to taste
  • Fresh parsley for garnish Adds a fresh finishing touch.

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken thighs with salt and pepper and brown them on both sides for about 5 minutes each.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add chopped onion and garlic, sautéing until softened.
  • Stir in the Dijon mustard and cook for another minute.
  • Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  • Return the chicken to the skillet, cover, and let it braise for about 25-30 minutes until the chicken is cooked through.
  • Garnish with fresh parsley and serve hot.

Notes

Serve with mashed potatoes, rice, or crusty bread to soak up the sauce. A side of green veggies or salad is great too. Store leftovers in an airtight container in the fridge for up to 3 days.
