  • 8 all-beef hot dogs Feel free to use chicken or turkey hot dogs for a lighter option.
  • 8 soft hot dog buns, lightly toasted Whole grain or gluten-free buns can be used for a healthier choice.

For the Sauce

  • 1/4 cup mayonnaise Greek yogurt can be a great substitute for a lower-calorie option.
  • 2 tablespoons sriracha sauce Adjust to taste for spiciness.
  • 1 tablespoon honey Maple syrup can be used as a vegan alternative.
  • 1 teaspoon smoked paprika For additional smoky flavor.
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice

To Serve

  • 1 cup shredded sharp cheddar cheese (or pepper jack) Consider dairy-free cheese for a vegan option.
  • 1/2 cup diced red onions
  • 1/2 cup sliced jalapeños (optional) Remove seeds for less heat.
  • Fresh cilantro leaves For garnish.

Preparation

  • In a small bowl, whisk together the mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth.
  • Dice the red onions, slice the jalapeños, shred the cheese, and chop the cilantro.

Grilling

  • Preheat the grill to medium-high heat (about 400°F).
  • Place the hot dogs on the grill and cook for 5-7 minutes, turning occasionally.
  • In the last 2 minutes of grilling, place buns cut-side down on the grill to toast.

Assembly

  • Spread the firecracker sauce inside each bun.
  • Add the grilled hot dog and top with cheese, onions, jalapeños, and cilantro.

Serving

  • Serve immediately and enjoy the hot dogs while they are warm and cheesy.

Notes

Store the Firecracker Sauce in the fridge for up to a week. Leftover assembled hot dogs can be kept in the fridge for 1-2 days but are best eaten fresh.
