Ingredients
  

For the Base

  • 2 slices hearty sandwich bread No large holes
  • 1 large egg Can use egg whites for lighter version

For the Filling

  • 1/2 cup grated cheese Cheddar, pepper jack, or gruyere
  • 1 teaspoon finely chopped fresh herbs Thyme or rosemary
  • to taste Salt
  • to taste black pepper
  • a pinch cayenne Optional for added heat

Instructions
 

Preparation

  • Lightly toast the bread slices or broil each side for 1–2 minutes until just golden.
  • Preheat your oven to 400°F (204°C), placing the rack on the bottom shelf if using a toaster oven.
  • In a small bowl, beat the egg until fully combined.
  • Stir in the grated cheese, fresh herbs, salt, and pepper into the egg mixture, ensuring everything is evenly combined.
  • Spread the cheesy egg mixture to the edges of your toasted bread, and sprinkle a pinch of cayenne if desired.

Cooking

  • Place the assembled toasts on a baking sheet and bake in your preheated oven for 10–12 minutes, or until the egg is puffed and golden.

Notes

Consider finishing off the toasts with a sprinkle of fresh herbs for brightness. A drizzle of hot sauce can add a kick.
