Ingredients
  

For the Base

  • 2 medium zucchini, grated Substitute with yellow squash if desired.
  • 1 cup all-purpose flour Whole wheat flour or almond flour can be used.
  • 1 cup shredded mozzarella cheese Use any shredded cheese like cheddar or pepper jack.
  • 1/4 cup grated Parmesan cheese Optional for added flavor.
  • 2 large eggs Flax eggs can be used for a vegan option.
  • 1 tsp garlic powder Adjust to taste for more flavor.
  • 1 tsp dried oregano Feel free to add fresh herbs for variety.
  • Salt and pepper to taste Increase seasoning to enhance flavor.

For Brushing

  • Olive oil for brushing Brush lightly to achieve a golden brown color.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the grated zucchini, flour, mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, salt, and pepper until well combined.
  • Spread the mixture onto the prepared baking sheet, creating a rectangular shape that is about 1/2 inch thick.
  • Brush the top of the zucchini mixture lightly with olive oil.

Baking

  • Bake in the preheated oven for 15-20 minutes or until the top is golden and crispy.
  • Remove from the oven and let cool for a few minutes before cutting into strips.

Notes

Use fresh zucchini for the best flavor and texture. Squeeze out excess moisture before mixing to prevent a watery mixture.
