Ingredients
  

For the Breadsticks

  • 2 medium zucchinis, grated Grate finely for the best texture.
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup grated Parmesan cheese Alternatively, use mozzarella or cheddar.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder May substitute with fresh minced garlic.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, baking powder, garlic powder, salt, and pepper. Stir until everything is well mixed.
  • Add the beaten egg and olive oil to the mixture. Stir until all ingredients are combined evenly.
  • Scoop spoonfuls of the mixture onto the prepared baking sheet, shaping them into breadstick forms.

Cooking

  • Bake in the preheated oven for 15-20 minutes or until golden brown.
  • Allow to cool slightly before serving. Enjoy your freshly baked zucchini breadsticks!

Notes

Make-ahead: Prepare the mixture and store it in the fridge for a few hours before baking. For freezing, freeze the unbaked mixture shaped into breadsticks on a baking sheet, then transfer to a freezer-safe bag.
