Ingredients
  

For the Base

  • 4 pieces chicken breasts Can substitute with skinless chicken thighs.

For the Sauce

  • 1 cup teriyaki sauce Use low-sodium for a healthier option.
  • 2 cloves garlic, minced Fresh garlic preferred, powder can be used in a pinch.
  • 1 tablespoon ginger, grated Fresh ginger is best, ground ginger can be used if necessary.

To Serve

  • 2 cups cooked rice Consider brown rice or quinoa for healthier alternatives.
  • 1 bunch sliced green onions For garnish.
  • 2 cups steamed vegetables Examples include broccoli and carrots; use seasonal vegetables.

Preparation

  • Place the chicken breasts in the slow cooker to allow for even cooking.

Making the Sauce

  • In a bowl, mix together the teriyaki sauce, minced garlic, and grated ginger. Pour this mixture over the chicken.

Cooking the Chicken

  • Cook the chicken on low for 4-6 hours or on high for 2-3 hours until tender.
  • The chicken should shred easily when pierced with a fork.

Shredding and Serving

  • Once cooked, take two forks and shred the chicken inside the slow cooker to soak in the flavorful sauce.
  • Serve the shredded teriyaki chicken over cooked rice and top with sliced green onions and your choice of steamed vegetables.

Notes

For best flavor, marinate the chicken in the sauce for a couple of hours before cooking, if time allows. Check the chicken for doneness around the lower end of the cooking time to avoid overcooking. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
