  • 8 oz spaghetti Cooked according to package instructions
  • 2 cups cooked chicken, shredded Use rotisserie or leftover chicken
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper

For the Sauce

  • 1 can cream of chicken soup Low-fat version optional
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Can be replaced with Monterey Jack
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup chicken broth Vegetable broth for vegetarian version

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  • In a large bowl, combine cooked spaghetti, shredded chicken, cream of chicken soup, sour cream, cheddar cheese, diced onion, bell pepper, garlic powder, paprika, chicken broth, salt, and pepper.
  • Pour the mixture into a greased baking dish and spread it evenly.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
  • Let the casserole cool for a few minutes before serving.
