  • 1 medium butternut squash Peeled and cubed
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as thyme or rosemary)

Preparation

  • Preheat the oven to 400°F (200°C).
  • Peel and cube the butternut squash.
  • In a large bowl, toss the squash with olive oil, salt, and pepper.

Roasting

  • Spread the squash evenly on a baking sheet.
  • Roast in the preheated oven for about 25-30 minutes or until tender and caramelized.
  • Drizzle with honey and sprinkle feta cheese over the top.
  • Return to the oven for an additional 5 minutes to warm the feta.
  • Garnish with fresh herbs before serving.

Notes

This dish can be served warm or at room temperature. Great as a side for roasted meats or on its own as a snack. Leftovers can be stored in an airtight container in the fridge for about 3-4 days. To reheat, place in the oven or microwave until warmed through.
