Main Ingredients
- 1 lb boneless, skinless chicken breast
- 2 tbsp olive oil or neutral oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp Italian seasoning
- 0.5 tsp paprika
- 1 small onion diced
- 2 cloves garlic minced
- 2 cups chicken broth
- 8 oz dry penne pasta
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tbsp fresh parsley optional, for garnish
Pat chicken dry and season both sides with salt, pepper, Italian seasoning, and paprika. In a large skillet or pot, heat olive oil over medium heat. Add the chicken and sear each side for 3-5 minutes until golden. Remove and set aside to rest.
In the same pan, add a bit more oil if needed. Cook the diced onion until soft, then add garlic. Stir for about 30 seconds until fragrant.
Add chicken broth to the pan and bring to a boil. Stir in pasta. Reduce to a low simmer and cover. Cook until pasta is tender, about 10-12 minutes, stirring occasionally.
Turn off the heat. Pour in the heavy cream and parmesan cheese. Stir until smooth and creamy.
Slice the rested chicken and mix it into the pasta. Let everything sit for a minute to blend flavors.
Top with chopped parsley if desired. Serve warm.
Use freshly grated parmesan for the best melt and flavor.
Don’t overcook the pasta; it should be al dente.
Adjust the sauce thickness with a splash of broth if needed.
Slice chicken after resting to keep it juicy.
Try variations like using chicken thighs, adding veggies, or broiling with breadcrumbs for a crispy top.
