  • 1 box Jiffy corn muffin mix
  • 1 can corn (drained)
  • 1 can creamed corn
  • 1 cup sour cream Can be substituted with Greek yogurt.
  • 1/2 cup melted butter
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the Jiffy corn muffin mix, drained corn, creamed corn, sour cream, melted butter, and salt and pepper. Mix until well combined.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • If using, sprinkle shredded cheese on top.

Baking

  • Bake in the preheated oven for 45-55 minutes, or until the top is golden brown and a toothpick comes out clean.
  • Let it cool for a few minutes before serving.

Notes

You can serve Easy Jiffy Corn Casserole as a side dish with fried chicken, grilled meat, or BBQ. It can also be served as a vegetarian main dish. To store leftovers, use an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
