  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 3 cloves garlic cloves, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and garlic, and sauté until the onion is translucent.
  • Add the ground beef and cook until browned.
  • Stir in the carrots, potatoes, beef broth, diced tomatoes, Worcestershire sauce, and thyme.
  • Bring to a boil, then reduce heat to low and let simmer for about 30-40 minutes, or until the vegetables are tender.
  • Season with salt and pepper to taste before serving.

Notes

Serve the stew hot in bowls. You can add a piece of crusty bread on the side for dipping. A sprinkle of fresh parsley can also add a nice touch. Let the stew cool completely before transferring it to an airtight container. Store it in the refrigerator for up to three days. If you want to keep it longer, freeze it for up to three months. Reheat thoroughly before serving. For a thicker stew, mash some of the potatoes after cooking. Feel free to add other vegetables like peas or green beans. Adjust the seasoning to your taste.
