Ingredients

For the Chicken

  • 6 pieces boneless chicken thighs Alternatively, use boneless, skinless chicken breasts.
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced Use fresh garlic for best flavor.

For the Pasta

  • 12 oz fettuccine pasta Any pasta can be used; penne or spaghetti work as alternatives.

For the Sauce

  • 2 tbsp butter
  • 1 cup heavy cream Can substitute with half-and-half or dairy-free alternatives.
  • 1 cup parmesan cheese, grated Freshly grated cheese preferred over pre-packaged.
  • 1 tsp Italian seasoning Can make your own mix with dried basil, oregano, and thyme.

To Serve

  • 1 bunch fresh parsley, chopped Adds color and freshness.

Instructions

Preparation

  • Pat the chicken thighs dry with paper towels to ensure a crispy sear.
  • Season both sides with salt, black pepper, and paprika.

Cooking the Chicken

  • In a large oven-safe skillet, heat the olive oil over medium heat until shimmering.
  • Place the chicken thighs smooth side down in the hot skillet. Cook for 5-7 minutes until deeply golden.
  • Carefully flip the chicken and sprinkle brown sugar and minced garlic on top. Let everything melt for about 1 minute.
  • Transfer the skillet to a preheated oven at 400°F (200°C). Bake for 12-15 minutes, or until the chicken reaches 165°F (74°C).

Cooking the Pasta

  • While the chicken bakes, cook the fettuccine in salted boiling water until tender, about 9-11 minutes. Drain and set aside.

Making the Alfredo Sauce

  • In a saucepan over low heat, melt the butter. Gradually pour in the heavy cream, stirring gently until smooth.
  • Slowly mix in the grated Parmesan cheese until you have a rich and creamy Alfredo sauce.

Combining and Serving

  • Combine the cooked fettuccine with the Alfredo sauce, ensuring the pasta is fully coated.
  • Plate the creamy pasta, top with the caramelized chicken thighs, and garnish with fresh parsley.

Notes

For added richness, drizzle a bit of olive oil over the finished dish. Freshly cracked black pepper adds extra spice.
