  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder

Preparation

  • Remove chicken from the refrigerator 20 minutes before cooking. Pat completely dry with paper towels.
  • Season both sides of the chicken thighs with salt. Wait 2 minutes, then add the remaining spices.
  • Preheat the oven to 400°F with the rack in the center position.
  • Brush a baking sheet with 1 tablespoon of olive oil. Arrange the chicken thighs on the sheet with space between them. Drizzle with the remaining oil.

Cooking

  • Bake for 18 minutes. Flip the thighs and bake for an additional 14 minutes.
  • Check the internal temperature of the chicken, which should reach 175°F at the thickest part.
  • Tent with foil and let it rest for 3 minutes before serving.

Notes

Make sure to pat the chicken dry before seasoning for better browning.
