Ingredients
  

Coconut Mixture

  • 5 cups unsweetened coconut (medium shred) Use medium-shred coconut to help the bites hold shape.
  • 14 oz sweetened condensed milk Provides sweetness and binds the mixture.
  • 2 tbsp butter, melted & cooled Melted butter adds richness.
  • 1 tsp vanilla extract Enhances flavor.
  • ¼ cup confectioner’s sugar Adjust based on sweetness preference.
  • Liquid food coloring For adding pastel colors to the shredded coconut.

Coating

  • 2 cups unsweetened coconut (fine shred) Colored to coat the bites.

Instructions
 

Preparation

  • In a large bowl, whisk together the condensed milk, melted butter, and vanilla.
  • Stir in the medium-shred coconut and confectioner’s sugar. Chill for 15 minutes.
  • Meanwhile, in a separate bowl, mix ½ cup of fine-shred coconut with 3-4 drops of food coloring and blend until evenly colored. Repeat for each color.

Forming the Bites

  • Scoop the chilled mixture into 1½ teaspoon portions and roll into balls.
  • Coat the balls in the colored coconut.
  • Place on a baking sheet and chill for 1 hour to set.

Notes

Serve these bites cold or slightly chilled. They are perfect for parties or as a fun dessert for kids.
