  • 1 cup sun-dried tomatoes in oil, drained and chopped Adds essential flavor.

  • 1 cup chicken broth Use low-sodium if preferred.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes Optional, adjust for spice level.

Preparation

  • Place the chicken breasts at the bottom of the crockpot.
  • Sprinkle the chopped sun-dried tomatoes over the chicken.
  • In a bowl, combine the softened cream cheese, chicken broth, garlic powder, Italian seasoning, red pepper flakes, salt, and pepper. Mix until smooth.
  • Pour the cream cheese mixture over the chicken and tomatoes, ensuring everything is coated.

Cooking

  • Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  • Once cooked, shred the chicken with two forks while still in the sauce.
  • Stir to combine the shredded chicken with the sauce, and you're ready to serve!

Notes

This dish can be served over pasta, rice, or on its own. Garnish with basil for a pop of color. Leftovers can be stored in the refrigerator for up to 3-4 days, or freeze for longer storage. Consider marinating the chicken in the sauce ingredients for added flavor.
