Ingredients
  

For the Base

  • 8 oz gluten-free pasta Can substitute with regular pasta if gluten is not a concern.
  • 1 cup dill pickles, chopped Sweet pickles can be used for a different flavor profile.

For the Sauce

  • 1/2 cup dill pickle juice Adjust according to taste.
  • 1/2 cup vegan mayonnaise Can substitute with plain yogurt or homemade cashew cream.
  • 1/4 cup fresh dill, chopped Dried dill can be used if fresh is not available.
  • Salt, to taste Adjust seasoning based on preference.
  • Pepper, to taste Adjust seasoning based on preference.

Preparation

  • Begin by bringing a large pot of water to a boil. Add the gluten-free pasta and cook according to the package instructions. Drain and cool.
  • In a large mixing bowl, combine the cooled pasta, chopped dill pickles, dill pickle juice, vegan mayonnaise, fresh dill, salt, and pepper. Stir until everything is well combined.
  • Cover the bowl with plastic wrap or a lid and place in the refrigerator to chill for at least 30 minutes before serving.

Notes

Prepare the salad a few hours in advance for best flavor. Store leftovers in an airtight container in the fridge for up to three days.
