  • 1 can can of chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and diced carrots, sauté until softened, about 5 minutes.
  • Add minced garlic and cumin, stir for 1 minute until fragrant.

Cooking

  • Pour in the vegetable broth and bring to a boil.
  • Add chickpeas and reduce heat, simmer for 15-20 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

For a smoother soup, blend it with an immersion blender after it’s finished cooking. If you like a thicker soup, add a tablespoon of cornstarch mixed in water while it simmers. Customize with favorite vegetables like spinach, kale, or potatoes.
