Ingredients

For the Cookies

  • 1 cup dandelion petals, washed and dried Use fresh dandelion petals for the best flavor.
  • 1/2 cup butter, softened Can be substituted with coconut oil or plant-based butter for dairy-free.
  • 1 cup sugar Consider using coconut sugar for a healthier alternative.
  • 1 egg
  • 1 teaspoon vanilla extract Can swap with orange or lemon extract for citrusy flavor.
  • 2 cups flour Whole wheat flour can be used for added nutrition.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in one egg and the vanilla extract to the butter-sugar mixture.
  • In a separate bowl, combine flour, baking powder, and salt. Gradually mix these dry ingredients into the wet mixture.
  • Fold in the washed and dried dandelion petals gently.
  • Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Chill the dough if it's too sticky before baking. Experiment with flavors such as chocolate chips, nuts, or lavender for variety.
