  • 8 oz cream cheese Regular, low-fat, or a dairy-free alternative can be used.
  • 1 cup sliced bell peppers Red, yellow, or green bell peppers add color and crunch.
  • 1 cup shredded carrots Provides sweetness and additional nutrients.
  • to taste fresh herbs (dill, parsley, or basil) Enhance the flavor profile.
  • optional smoked salmon, turkey slices, or hummus For added flavor and protein.

Preparation

  • Wash the cucumbers thoroughly and slice them lengthwise into thin strips (about 1/8 inch thick) using a vegetable peeler or mandoline.
  • In a mixing bowl, combine the cream cheese with your choice of herbs, garlic powder, salt, and pepper.

Assembly

  • Lay a cucumber strip flat and spread a delicate coating of the cream cheese blend onto it.
  • Add a few slices of bell pepper and shredded carrots on top. Feel free to add other ingredients like avocado or cooked quinoa.
  • Starting from one end, gently roll the cucumber strip, securing the filling inside. Avoid rolling too tightly to prevent breakage.

Serving

  • Arrange roll-ups on a platter, garnished with extra herbs or edible flowers for color. Drizzle with balsamic glaze or sprinkle sesame seeds over the top.

Notes

Make cream cheese mixture ahead of time. Use colorful vegetables for impressive presentation. Roll-ups can be made ahead and stored for up to two days.
