Ingredients

For the Base

  • 2 medium Cucumbers You can use English cucumbers for a milder flavor or pickling cucumbers for extra crunch.
  • 1 cup Feta cheese (crumbled) Crumbled goat cheese or cotija can offer a different flavor profile.

For the Sauce

  • 3 tablespoons Lemon juice Use freshly squeezed for a brighter flavor.
  • 3 tablespoons Olive oil Avocado oil can be used as a substitute.
  • 1 clove Garlic (minced) Roasted garlic is a great alternative if you prefer a milder taste.
  • 1 tablespoon Dill (fresh or dried) Fresh dill provides a vibrant flavor, but dried can work in a pinch.
  • Salt (to taste)
  • Black pepper (to taste)

To Serve

  • Additional dill or parsley (optional for garnish)

Instructions

Preparation

  • Slice the cucumbers into thin rounds or half-moons, aiming for even thickness for a uniform crunch.
  • In a bowl, combine the sliced cucumbers and crumbled feta cheese.
  • In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, dill, salt, and black pepper to create the vinaigrette.
  • Pour the vinaigrette over the cucumber and feta mixture, tossing gently to combine.
  • Allow the salad to sit for a few minutes to let the flavors meld together.
  • Serve immediately or refrigerate for later, enjoying it chilled.

Notes

Chill the salad before serving for a refreshing experience. Adjust the salt and pepper to taste, especially since feta can be quite salty. You can prepare the salad a few hours in advance but keep the vinaigrette separate until serving.
