Ingredients
  

For the Chicken

  • 4 pieces chicken thighs Can use boneless, skinless chicken thighs to reduce prep time.

For the Marinade

  • 1/4 cup olive oil Can substitute with avocado oil for a milder flavor.
  • 1/4 cup lime juice Can substitute with lemon juice for a different taste.
  • 1/4 cup orange juice
  • 4 cloves garlic, minced Garlic powder can be used if fresh garlic isn't available, but is less flavorful.
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • to taste Salt Use low-sodium soy sauce to make it less salty.
  • to taste Pepper

To Serve

  • as needed Lime wedges Optional garnish.

Instructions
 

Preparation

  • In a bowl, combine olive oil, lime juice, orange juice, minced garlic, cumin, oregano, salt, and pepper. Stir well to ensure all ingredients are mixed thoroughly.
  • Place the chicken thighs in a sealable bag or bowl, and pour the marinade over them, ensuring they are well coated. Seal the bag or cover the bowl.
  • Marinate in the refrigerator for at least 30 minutes. For better flavor, marinate for a few hours.

Cooking

  • Preheat your grill or oven to 400°F (200°C). If using a grill, prepare it for direct heat cooking.
  • Grill or bake the chicken thighs for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Serving

  • Serve hot, garnished with lime wedges if desired.

Notes

The longer you marinate, the more flavorful the chicken will be. Monitor the heat when grilling to prevent burning and always check the internal temperature for safety. Let the chicken rest for a few minutes after cooking for juiciness.
