  • 1 can Black beans Rinsed and drained
  • 1 can Diced tomatoes With juices
  • 8 oz Cream cheese Cut into chunks for easier melting

  • 1 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1 tsp Pepper

Preparation

  • In a crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, and seasonings.

Cooking

  • Cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add the cream cheese and stir until melted and combined.

Notes

For extra flavor, consider sautéing onions and garlic before adding them to the crockpot. Adjust the spices to your taste. If you like it spicy, add some jalapeños or cayenne pepper. If you want a thicker chili, add a little more cream cheese or a cornstarch slurry before serving.
