Main Ingredients

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 cups pasta (e.g., rotini or penne) Can use gluten-free pasta if needed.
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 packet taco seasoning Make sure it's gluten-free if necessary.
  • 2 cups cheese (cheddar or Mexican blend) Pepper jack adds a spicy flavor.
  • 1 cup beef broth Use vegetable broth for a vegetarian version.

Instructions
 

Preparation

  • In a skillet, brown the ground beef and onion over medium heat until the beef is fully cooked. Drain excess fat.
  • Add the ground beef mixture to the crockpot.
  • Stir in pasta, black beans, diced tomatoes, taco seasoning, beef broth, salt, and pepper.

Cooking

  • Cook on low for 4-6 hours or high for 2-3 hours.
  • About 15 minutes before serving, stir in cheese until melted.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 2 months. Reheat in the microwave or stovetop.
