Ingredients
  

For the Chicken

  • 1.5 lb chicken breast about 4, 6 oz. pieces; chicken thighs will work
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ¼ tsp onion powder
  • ½ tsp pepper
  • ½ tsp salt

For the Sauce

  • ¼ c honey
  • ¼ c Dijon mustard
  • 2 Tbsp butter (melted)
  • 2-3 garlic cloves (minced)

To Serve

  • ¼ c heavy cream optional: 2 Tbsp cornstarch and 4 Tbsp cold water to thicken

Preparation

  • Start by patting your chicken dry with a paper towel to help the seasonings stick better.
  • Sprinkle the salt, pepper, oregano, onion powder, and paprika over the chicken, ensuring it's evenly coated.
  • In a separate bowl, whisk together the honey, Dijon mustard, garlic, and melted butter until smooth.
  • Pour the sauce over the seasoned chicken, covering it as much as possible.

Cooking

  • Close the lid on your crockpot and cook the chicken on LOW heat for about 3 hours, or until it reaches an internal temperature of 165°F. Check the chicken after 2 hours if possible.
  • Once cooked, pull apart the chicken into large chunks or shred it completely.
  • About 30 minutes before serving, stir in the cream for a rich consistency.

Thickening the Sauce (Optional)

  • If you prefer a thicker sauce, whisk the cornstarch and cold water together until smooth.
  • Stir this mixture into the sauce and let it heat on a warm setting for about 30 minutes.

Notes

Top with chopped parsley or chives before serving for freshness. Serve with a warm baguette or breadsticks to soak up the sauce. Feel free to customize with favorite veggies or adjust seasonings to taste.
